This limited-edition Cabernet Sauvignon has literally been years in the making. This single vineyard Cabernet is sourced entirely from Bunker Hillside Vineyard on Sonoma Mountain. Eric Bunker lives on the property and has been farming the vineyard he planted there for over 40 years. We started working with Eric for his acclaimed chardonnay in 2021, but the upper portion of the vineyard, where the topsoil is richer (three feet deep instead of one foot) is planted to Cabernet Sauvignon. A mix of the historic Clone 8 and the robust 169 Clone, the vineyard has been the first to inspire the idea of a structured, richer and age worthy Cabernet Sauvignon the likes of which we had yet to attempt under Iconic Bunker Hillside Vineyard is on the western slope of Sonoma Mountain and sits at over 1,500 ft in elevation. From the vineyard, you can see clear across the Petaluma gap. Due to its high exposure to the marine layer fog, the vineyard is very late ripening with picks typically well into October.

 

The 2021 vintage was picked October 12th, just before the heavy rains began. The Cabernet was destemmed and cold soaked for three days before allowing it to warm up. Fermentation was native yeast and was fermented on the skins for 25 days with once daily pumpovers until fully dry. The wine was then aged in a mix of 33% new and 66% used French Oak barrels for 30 months. The result is a rich but bright red showcasing what California hillside Cabernet Sauvignon is known for. Blackberry and currant mix with pine sap, oregano and vanilla. With it’s extended barrel aging the wine is ready to drink on release, but also has many more years to it if you wish to keep a few extra bottles in your cellar.
